Nowadays, we all look for something delicious but also healthy. That’s why I am here today to teach you a simple Iranian/Persian breakfast. This is a breakfast (sobhoone/ صُبحونه) from the north of Iran, Guilan province, the capital of which “Rasht” is recognized by UNESCO as the Creative City of Gastronomy.
What do we need for this breakfast?
eggs (tokhme morgh), oil (roghan), Feta cheese (panir e Fetā), dried dill (shewid e khoshk), peper (felfel)
Now, let’s start! Did you get the pan ready?
First, warm up the pan and slice the cheese into averaged size squares. Now torrefy the slices of cheese with oil and add the dried dill too, Do not let the cheese melt, just make them softer. You should be able to smell it well by now.
If you use a bit of butter (ka’re) or replace it with oil, you will get even more delicious food!
Now add the eggs and mix and let it fry!
Your breakfast “Panir bereshte” (torrified cheese) is ready!
